The top chili cooks squared off in heated competition in the Chili Cook Off contest, judged Saturday August 18 at the 2018 Iowa State Fair.
Gary Vinsand of Dakota City, claimed first place, $250 cash prize, and is eligible for the World’s Chili Cook-off Championships.
Thomas Patterson of West Des Moines earned second place and $150. Mark Patterson of West Des Moines, claimed third place and $75.
Entrants were required to be a member of the International Chili Society and were asked to prepare at least two quarts of “Red Texas Style” Chili on site during the Fair. “Red Texas Style” chili uses no beans or pasta. The chili can contain any combination of meats, cooked with chili peppers and spices.
Each entry was judged on texture of the meat, chili flavor, and consistency/blend of spices, aroma and color.
